Ingredients:

- 3-4 green chilies, slit
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 4-5 cloves
- 2-3 cardamom pods
- 1-inch cinnamon stick
- 2 bay leaves
- Fresh coriander leaves for garnish
- Salt to taste
- 4 tablespoons oil
Instructions:
- Marinate the Mutton:
- In a bowl, mix the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, and salt. Let it marinate for at least 1 hour, preferably overnight in the refrigerator.
- Prepare the Masala:
- Heat oil in a heavy-bottomed pan. Add cloves, cardamom pods, cinnamon stick, and bay leaves. Sauté until fragrant.
- Add chopped onions and sauté until golden brown.
- Add green chilies and ginger-garlic paste. Cook for a few minutes until the raw smell disappears.
- Cook the Mutton:
- Add the marinated mutton to the pan. Cook on medium heat until the mutton changes color.
- Add tomato puree, red chili powder, coriander powder, and cumin powder. Mix well and cook for 5-7 minutes until the oil separates from the masala.

- 2-3 cardamom pods
- 1-inch cinnamon stick
- 2 bay leaves
- 4 tablespoons ghee or oil
- Fresh coriander leaves for garnish
- Salt to taste
